Cheddar Sausage Bacon Bites

Ingredients
- 12oz North Country Smokehouse Vermont Cheddar Sausage
 - 8 oz North Country Smokehouse Sugar Free Organic Applewood Smoked Bacon
 - 4 oz mild goat cheese
 - Apricot preserves
 
Cooking Instructions
- Preheat oven to 375 degrees F.
 - Slice sausage into 1-inch circles.
 - Slice bacon strips in half.
 - Wrap a half-piece bacon around each sausage piece. Place onto a baking sheet that has a lip to catch the grease. Repeat until all sausage is wrapped.
 - Bake for 15-20 minutes, or until bacon is crispy. Remove from oven to cool.
 - Place a ½ teaspoon of goat cheese and a teaspoon of apricot preserves on the top of each bacon wrapped sausage. Insert a tooth pick in the center.
 - Display on a platter and enjoy!
