Bacon Crumble Peach Cobbler

Description
Who said bacon was only for breakfast? With our organic applewood smoked bacon crumbles, you can use bacon for anything without dirtying a single pan!
Ingredients
- Crisp:
- 1 oz North Country Smokehouse Organic Applewood Smoked Organic Bacon Crumbles,
- 3/4 C chopped pecans,
- 2 TBSP authentic maple syrup,
- 1/3 C unsalted sunflower seeds,
- Peach Filling:
- 4 C peeled, diced fresh peaches (about 5-6),
- 1/3 C sugar,
- 2 tsp cinnamon,
- Crust:
- 3 large eggs,
- 1/2 ripe banana,
- 1/8 C coconut flour,
- 1/8 C creamy almond butter,
- 2 Medjool dates, pitted & finely chopped,
- 1/2 TSP vanilla,
- 1/4 TSP baking powder,
- 1/2 TSP cinnamon,
- 1/4 TSP ground ginger
Cooking Instructions
- In a medium skillet, cook bacon crumbles, pecans, maple syrup and sunflower seeds for about 3-4 minutes to coat & caramelize nuts and seeds. Set aside.
- Preheat oven to 350F.
- In a pan, heat peaches, sugar, and cinnamon until sugar is dissolved and everything is well-mixed. Set aside.
- In a food blender, blend crust ingredients to desired crumble. Set aside.
- In a greased 9-inch tart pan or springform pan, scatter crisp along the bottom. Next, spoon peach mixture. Last, pour in the crust mixture evenly over pan.
- Place the pan on a baking sheet. Bake for 40 minutes. Remove from heat and let rest for 30 minutes. Flip over onto a serving platter and remove from pan.
- Top with your favorite vanilla ice cream or whipped cream (or any extra bacon crumble) and enjoy!
