Pesto Ham Tortellini Salad

Description
This pesto tortellini salad with meaty chunks of applewoood smoked ham steak might just become your next hyperfixation meal.
Ingredients
- 2, 6oz North Country Smokehouse Organic Ham Steak, diced
- 20 oz cheese tortellini
- 1 C pesto
- 1 ½ C cherry tomatoes, sliced in half
- 12 oz mozzarella balls, drained
- ¼ C red onion, diced
Cooking Instructions
- Bring a large pot or salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Make sure not to overcook.
- Drain and rinse under cold water.
- Place tortellini in a large serving bowl. Add ham, pesto, tomatoes, cheese, and onion. Toss well to coat.
- Serve immediately. Keeps in fridge for up to 3 days when covered.
