Vermont Cheddar Sausage Queso

Description
Rich, creamy & smoky: this trifecta is a game-day win!
Ingredients
- 6 slices of Organic American Cheese
- 8 oz. Extra Sharp Aged Cheddar Cheese
- ½ cup Organic Half and Half
- 4 oz. Canned Green Chiles, hot or mild depending on preference
- 2 links North Country Smokehouse Vermont Cheddar Sausage, diced at about 1/4 inch
Cooking Instructions
- Finely grate the cheddar cheese. (Store-bought shredded cheese won’t work here; it has a starch coating that keeps the shreds from sticking together but also changes the way it melts)
- In a skillet over low heat, lay the slices of American cheese down, and pile the shredded cheddar on top. Allow the cheese slices to melt, then stir into the cheddar and mix over medium-low heat until completely melted and smooth. Add the half and half and stir to combine.
- Add the canned chilies and diced sausage, stir to combine, and continue heating until the dip is warm and bubbly.
- Serve hot with corn chips, and be prepared to make more!
