Description
Delicious, buttery potatoes topped with crispy bacon for a playful appetizer or hearty side dish.
Ingredients
- 6 russet potatoes, washed
- ½ stick of unsalted butter, melted
- 6 oz North Country Smokehouse Bacon, cooked until crisp, fat reserved
- Chopped chives
- Smoked Paprika
- Sour cream
- Fresh Thyme
Cooking Instructions
- Preheat oven to 450 F.
- Place the potatoes between the handles of two wooden spoons, or two chopsticks. Using a sharp knife, thinly slice the potatoes (between 1/8 -1/4” thick), stopping at the chopsticks, so that the bottom ¼ inch of the potato remains connected. Arrange on a cookie sheet.
- Brush and drizzle sliced potatoes with the melted butter and reserved bacon fat, making sure to get it in between the slices. Season with salt, pepper and a pinch of paprika to taste.
- Bake, uncovered, for 50 mins to one hour until tender with crispy edges.
- Remove from the oven, top with sour cream, crumbled bacon, chives and thyme. Serve warm.
