Sweet & Savory Bacon Banana Bread

Description
Not a fan of nuts in your banana bread? Swap them out for your favourite smoky strips for a little salty flavour that offsets the sweetness of the bananas.
Ingredients
- 8 slices Uncured Cob Smoked Bacon, cooked and roughly chopped
- 1 ¼ C all-purpose flour, divided
- 1 tsp baking soda
- 1 tsp baking powder
- 1 C sugar
- 3 medium bananas, mashed
- ½ C canola oil
- 2 eggs
- 1 tsp vanilla extract
Cooking Instructions
- Preheat oven to 325°F. Lightly grease a 9x5 inch loaf pan. In a large bowl, combine 1 cup of the flour, baking soda, baking powder, and sugar. Add the banana mixture to the dry ingredients, stirring until just combined.
- In a small bowl, place bacon and remaining ¼ cup of flour; toss until bacon is lightly coated. Fold flour-coated bacon into the batter.
- Pour the batter into the prepared loaf pan. Bake for 70-80 minutes, or until toothpick inserted near the centre comes out clean.
- Cool in pan on a wire rack for 20 minutes before inverting the bread onto a wire rack to cool completely.
- Slice, serve, and enjoy!
