Slowcooker Leftover Ham & Bean Soup

Description
This savoury soup was born from humble beginnings. Made with hearty chunks of organic bone-in maple ham - your leftovers have a home here.
Ingredients
- Leftover North Country Smokehouse Organic Bone-In Ham
- 1 package of 15 bean soup
- 8 C low sodium chicken broth
- 1 onion, diced
- 1 clove garlic, minced
- 1 TSP chili powder
- 15 oz diced tomatoes
- 1 lemon, juiced
Cooking Instructions
- Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
- Place beans, onions, leftover ham with bone, broth, garlic, and chili powder in a 6qt slow cooker.
- Cook on high for 5 hours (or low for 7-8) or until beans are tender.
- Once tender, remove the hambone and chop any meat left on the bone. Add the ham back into the pot.
- Stir in diced tomatoes, and lemon juice. Cook for an additional 30 minutes.
- Serve and enjoy!
