Sugar Free Organic Bacon Lentil Bowl

Description
A belly full of fresh greens and clean label proteins will certainly help refuel and push past that midday slump.
Ingredients
- 6 slices North Country Smokehouse Sugar Free Organic Applewood Smoked Uncured Bacon, cooked & roughly chopped
- 1 C dried lentils, rinsed
- 2C fresh mushrooms, sliced
- 1 medium cucumber, cubed
- 1 medium zucchini, cubed
- 1 small red onion, chopped
- ½ C chopped soft sun-dried tomato halves (not packed in oil)
- ½ C rice vinegar
- ¼ C fresh mint, minced
- 3 TBSP olive oil
- 2 TSP honey
- 1 TSP dried basil
- 1 TSP dried oregano
- 4 C fresh baby spinach, chopped
- 4 oz. crumbled feta cheese
Cooking Instructions
- Place lentils in a small saucepan. Add 2 C water; bring to a boil. Reduce heat and simmer, covered, 20-25min or until tender. Drain and rinse with cold water.
- Transfer to large bowl. Add mushrooms, cucumber, zucchini, onion, and tomatoes.
- In a small bowl, whisk vinegar, mint, oil, honey, basil and oregano. Drizzle over lentil mixture; toss to coat.
- Add spinach, cheese, and bacon to lentil mixture. Toss to combine and enjoy!
