Cornbread Stuffing Sausage Bites

These cornbread sausage stuffing bites are something to be grateful for. Made with meaty morsels of uncured, old fashioned kielbasa - your brood will be counting their blessings.

Servings: 36 mini muffins

Ingredients:

24 oz. North Country Smokehouse Uncured Old Fashioned Kielbasa, sliced into ¼“ thick pieces
3 TBSP butter
1 C onion, chopped
1 C celery, chopped
1 TBSP fresh sage, chopped
½ C dried cranberries
2 TBSP fresh parsley, chopped (plus more for garnish)
Kosher salt
Freshly ground black pepper
4 C crumbled day-old cornbread
1 C turkey or chicken stock
2 large eggs


Method:

1) Preheat the oven to 350F degrees. Lightly oil 3 mini-muffin pans (36 muffins total)

2) Melt the butter in a large skillet over moderate heat. Add the onion and celery and cook, stirring occasionally, until softened, about 10 minutes.

3) Add the chopped sausage and sage to the pan and cook, stirring occasionally for 5 minutes. Remove from heat and stir in cranberries and parsley. Season to taste with salt and pepper.

4) Add the cornbread to the skillet and toss gently to combine.

5) Whisk together the turkey stock and eggs in a bowl. Pour the egg mixture over the cornbread mixture and toss gently to combine.

6) Divide the mixture evenly among the muffin cups with one slice of kielbasa in each cup. Bake until stuffing is slightly puffed and golden brown on top, 25-30 minutes. Remove from the oven. Let stuffing rest for 5 minutes before removing from the muffin pans and arranging on a serving platter. Garnish with chopped parsley before serving.
