Leftover Ham & Fried Egg Sandwich

Use leftover holiday ham for this delicious breakfast (or any time of day) sandy.

Ingredients: (makes 1 sandwich)

2 slices, crusty bread

3 TBS butter

2 oz aged cheese of your choice, grated or sliced (we love a good sharp cheddar, but you do you!)

Thick Sliced Applewood Smoked Boneless Maple Ham from North Country Smokehouse (Spiral and Bone-In Ham work well too)

1 egg

Optional condiments: Dijon mustard, horseradish, mayo, sriracha – the list goes on.

Method:

1) Pre-heat the broiler to 500 degrees, or heat up a toaster oven as high as it will go.

2) Using half the butter on each slice, generously butter the slices of bread.

3) Assemble the sandwich by placing one slice of bread, butter side down, on a baking sheet. Add the ham on the bottom slice, along with any of the optional condiments and ½ of the cheese. Place the second slice of bread next to it, buttered side up.

4) Place under the broiler about 6 inches from the heating element, and allow the bread to brown and crisp, and the cheese on top of the sandwich to melt. Carefully place the second slice of bread on top, press down to help the cheese “glue” it together, and turn the sandwich over. Return to the broiler until the remaining slice of bread is brown and crisp.

5) Sprinkle the top of the sandwich with the remaining cheese and return to the broiler until the cheese melts.

6) Top with a fried egg and enjoy immediately.
