Sugar Free Sausage Gravy & Biscuits

Low carb and less sugar for a post-holiday reset that keeps the flavor in your diet.

Ingredients:

12 oz. North Country Smokehouse Sugar Free Applewood Smoked Uncured Sausage, diced
½ TSP xanthan gum
1 TBSP sage leaves, fresh
1/8 TSP red pepper flakes
1 C chicken stock, low-sodium
2 C heavy cream
½ TSP sea salt
½ TSP black pepper

Method:

1) Heat a large skillet over medium high heat. When skillet is hot, add the diced sausage and cook until pieces are browned, about 3-5 minutes.

2) Adjust heat to low. Sprinkle xanthan gum on top and stir to combine. Add in sage and red pepper flakes.

3) Gradually add the chicken stock a few tablespoons at a time, stirring between additions.

4) Increase heat to medium and bring mixture to a simmer. Stirring frequently, simmering until the mixture thickens to a gravy-like texture.

5) Stir in the heavy cream. Bring mixture to a simmer, stirring frequently. Turn heat to low and simmer until gravy has thickened to the desired consistency. Season with salt and pepper to taste.

6) Remove from heat and serve over freshly toasted English muffins.
