Loaded Cajun Andouille Sausage Quesadillas

Beef and chicken have been done before. This loaded Cajun Style Andouille Quesadilla is the ultimate snack for game night.

Total Time: 15 min prep, 25 min cook

Servings: 4 quesadilla

Ingredients:

12 oz. North Country Smokehouse Uncured Andouille Cajun Style Sausage, finely diced
2 TBSP canola oil, divided
1 poblano pepper, finely diced
½ red bell pepper, finely diced
½ large red onion, finely diced
½ C frozen corn kernels
4 flour tortillas
2 C shredded Colby Jack cheese
¼ C sour cream
¼ C salsa
2 TBSP Big Dog Doghouse Seasoning
Louisiana hot sauce


 

Method:

1) Heat 1 TBSP of canola oil in a large skillet over medium heat. Stir in the diced sausage, poblano pepper, red pepper, red onion, corn, and seasoning. Cook until soft and sausage browned, about 10 minutes.

2) Spoon ¼ of the sausage mixture on one half of each tortilla; top each with ½ C of cheese and hot sauce to taste. Fold tortillas to make half moon shapes. Repeat with remaining ingredients.

3) Heat the remaining 1 TBSP of canola oil in large skillet over medium heat. Cook quesadillas until the cheese is melted and the tortilla is brown and crispy, about 5 minutes per side. Cut each quesadilla into 4 wedges. Serve with sour cream and salsa.
