Created by our very own Culinary Innovator and Cordon Bleu-trained Chef Chris Materra, our signature glaze recipe enhances the natural flavor of the meat rather than masking it. Double this recipe for any whole ham.
Serves 6
Ingredients:
½ Cup Authentic Maple Syrup (We use Mac's Maple)
2 TBSP Dijon Mustard
2 TBSP Bourbon or Rye Whiskey
3-6 grinds of fresh black pepper
Instructions:
1. Combine ingredients into a small pot. Whisk thoroughly until blended, then simmer over medium/low heat for roughly 5 minutes, until mixture is reduced by 1/3 and has a thick, syrup-like texture.
2. Brush your favorite North Country Smokehouse ham with the glaze before baking, then again 5-minutes before you remove it from the oven.
3. Savor the flavor.
