Savory, Smokehouse Style Bacon Gravy

A Rich, Smoky Sauce.

Save the bacon drippings from the breakfast skillet to make this creamy gravy for supper. 

Serves 4

Ingredients:

12 oz North Country Smokehouse Fruitwood Smoked Bacon (original or sugar free)

1/4 C flour

2 TBS Butter

3 C Whole Milk

¼ tsp onion powder (optional)

Dash of salt

Dash of pepper

Instructions:

1. In a large pan, cook the bacon over medium heat until browned and crisp. Remove from the pan and set aside to cool. Leave the drippings in the pan and add butter.

2. Still over medium heat, sprinkle flour over the bacon drippings and stir to make a smooth paste. Cook from 30 secs – 1 minute until fragrant.

3. Add the milk and whisk until the mixture is smooth. Bring to a simmer and cook for 1-2 minutes until the gravy has thickened. If too thick, add a splash more milk until the desired consistency is achieved.

4. Season with optional onion powder.

5. Season generously with salt and pepper to taste.

6. Crumble the cooked bacon into the gravy and stir to incorporate.
