Our smokehouse sits smack dab in the middle of New England, located in the same lush countryside we’ve been doing business on for more than a century. Like most New Englanders, we lean into seasonal ingredients and find ourselves drawn towards the flavors our region is so well known for. From sweet maple syrup to buttery cheese, our passion for provincial flavor is apparent in every handcrafted, small-batch we smoke.
Summer is the perfect time to break out of your meal-planning rut and try new recipes with local ingredients. Gardens are bountiful and farmers’ markets can be found on almost every corner. So, turn off the stovetop and take it outdoors – it won’t be difficult, our fully cooked sausage, ham, and hot dogs make meal prep a breeze - all you have to do is heat & serve. Be it family meals firmly planted at the picnic table, or carefree campfire cookouts, summer dining with friends and family in your own backyard is the stuff sweet, smoky dreams are made of.
There’s something about cold weather that makes a person crave hearty dishes full of savory ingredients and satisfying hunks of flavorful meat. The urge to hunker down and fortify your defense against the cold with a tasty homemade meal is relentless and pressing. Up here in Claremont, New Hampshire, we roll steadily through the year with four very distinct seasons: Short green summers, even shorter autumns, long white winters, and unpredictable springtimes. Given how long our winters can be, we tend to treat “the holidays” as an unofficial fifth season when we dig out candles and hang lights pretty much everywhere.

- 1 small white onion, sliced thin
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red tomato - chopped
- 1 jalapeno pepper, seeded and diced fine
- 2 slices sandwich bread, cut or torn into small pieces
- 2 links North Country Smokehouse certified humane, Chorizo with Brandy sausage - diced
- 8 eggs
- 4 oz. diced cheese (we used Jack but any firm cheese would work)

A popular alternative to basic burgers. This July 4th declare your independence from flavorless, dry sliders! This recipe is modeled on the White Castle square sliders and results in a juicy burger that fits all the way to the edge of the buns, which are held in place with melted cheese.
- 2 lbs. all-natural, ground beef (preferably 80% lean)
- 1 small white onion, finely grated
- 1 tsp. salt
- ½ tsp. black pepper
