Blackberry Ancho Chile Ham Steak

Ingredients
- 4, 6oz North Country Smokehouse Organic Applewood Smoked Ham Steak
- 6 oz whole blackberries
- 3 C chicken stock
- 1 dried ancho chile
- ½ medium onion, quartered
- 2 cloves garlic
- 1/3 C sugar
Cooking Instructions
- In a medium saucepan, combine chicken stock, ancho chile, onion, garlic, sugar, and 3 ounces of the blackberries (reserve the other half for garnish). Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove stem and seeds from the rehydrated ancho chile. Pour all sauce ingredients into a blender, including the seeded pepper. Blend for 1-2 minutes until smooth. Return the sauce to the pan and keep on low heat, stirring occasionally for 5 more minutes.
- Preheat your grill to medium-high heat. Brush ham steaks lightly on both sides with the blackberry ancho glaze.
- Place ham steaks on the grill and cook 2-3 minutes per side, brushing with additional glaze as desired. Cook until ham begins to brown and fully heated through.
- Serve with fresh blackberries and add additional sauce to taste.
