Blueberry Jam & Roasted Turkey Sandwich

Description
A true New England midsummer lunch made with our handcrafted, organic oven roasted turkey and blueberry jam from our local neighbour, Stonewall Kitchen. Pair with a tall glass of homemade lemonade and enjoy.
Ingredients
- 4 oz. North Country Smokehouse Organic Oven Roasted Turkey Sliced
- 1 ciabatta roll, split
- Locally crafted goat cheese
- Mayonnaise
- Handful of arugula
- 1 TBSP extra-virgin olive oil
- ½ TBSP red-wine vinegar
- 1 TSP finely grated red onion (optional)
- Salt and pepper
- 1 jar of Stonewall Kitchen Wild Maine Blueberry Jam
Cooking Instructions
- Heat the oven (or toaster oven) to 450 degrees. Place the ciabatta halves cut sides up on a sheet pan. Bake until golden brown, 3 to 5 minutes.
- Spread a generous layer of blueberry jam over one slice of bread and mayonnaise on the other. Top mayonnaise slice with our organic oven roasted turkey.
- In a bowl, combine the arugula, olive oil, vinegar and onion. Season with salt and pepper. Place on top of the turkey. Sprinkle desired amount of goat cheese. Close the sandwich and slice diagonally before serving.
