Grilled Peach & Bacon Salsa

Description
This beautiful grilled bacon and peach salsa recipe is sugar-free and made with only a handful of ingredients. Do more than dip a chip, top off our grilled ham steak or pile on top of our uncured deli franks for full-out flavor infusion.
Ingredients
- 12 oz North Country Smokehouse Sugar Free Applewood Smoked Uncured Bacon, cooked & roughly chopped
- 4 peaches, halved & pitted
- 4 heirloom tomatoes, diced
- 1 bunch cilantro
- 2 limes, juiced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- kosher salt
- freshly ground black pepper
Cooking Instructions
- Preheat your grill to high heat. Allow to heat for 10-15 minutes.
- Brush the flesh sides of your peaches with olive oil. Sprinkle salt across the flesh surface.
- Put the peaches, flesh-side down, on the grill. Cook for 10-20 minutes, or until grill sear marks start to appear on the fruit’s flesh.
- Remove the peaches from the grill and transfer to a cutting board. Allow them to cool for a few minutes and then dice them into small chunks.
- Transfer the chunks to a large bowl. Add the diced tomatoes, minced cilantro, lime juice, minced garlic, chopped bacon, and olive oil. Combine well. Add salt to season to taste, using lime juice if it becomes too salty.
- Serve with chips or crackers and enjoy!
