Ham Steak Cornbread Stuffing

Description
Bold, hearty pieces of our infamous Organic Uncured Ham Steak with a hint of sweet cornbread.
Ingredients
- 3, 6 oz North Country Smokehouse Organic Ham Steak
- 1 stick unsalted butter, plus more for the baking dish
- 2 sweet onions, chopped
- 4 stalks of celery, chopped
- 1 small bunch mustard greens, stemmed and chopped
- 1 TBSP fresh thyme, chopped
- 1 TBSP fresh sage, chopped
- 3 C low-sodium turkey or chicken broth
- Salt and pepper
- 2 large eggs
- 8 C of ½” stale cornbread cubes (about 12 oz) 8 C of ½” stale white country bread (about 12 oz)
Cooking Instructions
- Preheat oven to 375 degrees F. Lightly grease a shallow 3-quart baking dish.
- In a large pot, melt 6 TBSP over medium-high heat. Add the onions and celery, cook stirring occasionally until softened, about 5 minutes. Add mustard greens and cook, stirring, until wilted, about 3 minutes. Stir in ham, thyme and sage. Add the broth and salt and pepper to taste. Bring to a simmer, then remove from heat.
- Whisk the eggs in a large bowl. Add the bread cubes and ham-broth mixture. Stir until combined.
- Transfer the stuffing to the prepared baking dish. Cut the remaining 2 TBSP of butter into small cubes and scatter evenly over the top of the stuffing.
- Cover with foil and bake 30 minutes. Then uncover and bake until golden, about 20-30 minutes more.
- Serve and enjoy!
