Signature Ham Glaze Recipe

Created by our very own Culinary Innovator and Cordon Bleu-trained Chef Chris Matera, our signature glaze recipe enhances the natural flavour of the meat rather than masking it. Double this recipe for any whole ham.
Ingredients
- ½ Cup Authentic Maple Syrup (We use Mac's Maple)
- 2 TBSP Dijon Mustard
- 2 TBSP Bourbon or Rye Whiskey
- 3-6 grinds of fresh black pepper
Cooking Instructions
- Combine ingredients into a small pot. Whisk thoroughly until blended, then simmer over medium/low heat for roughly 5 minutes, until mixture is reduced by 1/3 and has a thick, syrup-like texture.
- Brush your favourite North Country Smokehouse ham with the glaze before baking, then again 5-minutes before you remove it from the oven.
- Savour the flavour.
