Sugar-Free Smoked Sausage & Pepper Soup

Real flavor doesn't require added sugar. Bid farewell to sweet indulgence and reset the table with this sugar-free smoked sausage and pepper soup.

Ingredients:

3, 12 oz. North Country Smokehouse Sugar Free Applewood Smoked Uncured Sausage, remove casings
2 large green peppers, chopped into half-inch pieces
2, 15 oz. cans crushed tomatoes
2 cans of water (rinse the crushed tomato cans out with the water)
7 C beef broth
2 C frozen cauliflower rice
1 small white onion, chopped
1 TBSP Worcestershire sauce
½ C of reduced sugar ketchup
4 TSP olive oil
1 TBSP Italian herb blend
Salt & pepper
Grated Parmesan cheese, freshly grated

Method:

1) Heat 2 TSP of olive oil in a large non-stick frying pan. Add the chopped onion and cook until just starting to brown. Then add in Italian herb blend, cooking until fragrant. Put seasoned onions into a large soup pot.

2) Add the chopped green peppers to the same frying pan and cook until they start to slightly char. Add peppers to the soup pot.

3) Add the other 2 TSP of oil to the frying pan, add the sausage and cook over medium-high heat until the sausage is slightly browned. Add to the soup pot.

4) Add the crushed tomatoes, water, beef broth, Worcestershire sauce, and ketchup to the pot. Bring the soup to a low simmer and let it cook for 30-40 minutes.

5) Then add 2 C of frozen cauliflower rice and let the soup cook 20-30 minutes more. Season to taste with salt and pepper. Serve hot with freshly grated parmesan as desired.
