Spiced Sausage & Sweet Potato Stew

Description
Warm up with a little extra spice in your stew this season. Our Jalapeno Cheddar sausage adds the perfect amount of heat and creamy cheddar chunks in every bite.
Ingredients
- 6 oz North Country Smokehouse Jalapeno Cheddar Sausage, sliced into coins,
- 1 medium yellow onion, chopped,
- 5 cloves of garlic, minced,
- 2 TSP of smoked paprika,
- 1 large sweet potato, peeled and chopping into
- ½” cubes, 5 C chicken broth,
- ½ C canned full fat coconut milk,
- 4 C fresh kale, roughly chopped,
- Cayenne Pepper, to taste,
- Olive oil,
- Salt & Pepper, to taste,
- 1 jalapeno, sliced (optional),
- Roasted Pumpkin seeds (optional)
Cooking Instructions
- Heat olive oil in a large soup pot over medium high heat. Once heated, add the sliced sausage and brown about 3-4 minutes. Add onions and cook another 2-3 minutes.
- Add the garlic, paprika, and cayenne, cook for another 1-2minutes. Stir in the sweet potatoes and toss to coat. Add salt and pepper to taste.
- Add the broth, lower the heat and simmer over medium heat for about 15 minutes, or until sweet potatoes soften.
- For a creamier soup, remove ½ of the sweet potatoes to a bowl and puree with an immersion blender. Stir back into soup pot. Add in coconut milk and kale, cook until just wilted, about 3 minutes.
- Serve alongside your favorite crusty bread and top with sliced jalapeno and pumpkin seeds.
