Cob Bacon Ranch Cheese Ball

May your bacon be crispy and your cheese balls abundant. This Cob smoked cutie is a hit at holiday gatherings.

Total Time: 2 hr prep, 10 min cook

Servings: 8 servings

Ingredients:

6 slices North Country Smokehouse Cob Smoked Uncured Bacon, diced
¼ C chopped pecans
¼ C chopped fresh parsley, divided
2, 8 oz. packages of cream cheese at room temperature
1 C shredded sharp cheddar cheese
¼ C goat cheese
1, 1 oz. package of Ranch Seasoning
1 TSP Worcestershire sauce

Method:

1) Heat a large skillet over medium-high heat. Add bacon and cook until brown & crispy, about 6-8 minutes. Transfer cooked bacon to a paper towel-lined plate.

2) In a small bowl, combine half the bacon, pecans, and 2 TBSP parsley. Set aside.

3) Prep your electric mixer with the paddle attachment. In the mixer bowl, beat cream cheese, cheddar cheese, goat cheese, ranch seasoning, Worcestershire sauce, remaining bacon and parsley on medium-high until well combined and fluffy, about 1-2 minutes.  

4) Cover and place in the refrigerator for at least 2 hours or overnight. Shape the mixture into a ball and roll in the prepared bacon-pecan mixture.

5) Serve with your favorite hearty crackers or pita chips and enjoy!
