Spicy Jalapeno Armadillo Bites

 Airfryer Armadillo bites are EVERYTHING. Our version includes Jalapeño peppers stuffed ground Vermont Cheddar sausage and cheddar cheese, then wrapped in Applewood bacon.

Ingredients:

16 strips of North Country Smokehouse Applewood Smoked Uncured Bacon
8 large jalapeno peppers

Sausage Mixture
2, 12oz North Country Smokehouse Vermont Cheddar Sausage, removed from casing
1 TSP brown sugar
½ TSP garlic, minced
½ TSP onion powder
½ TSP kosher salt
½ TSP freshly cracked black pepper

Cream Cheese Mixture
4oz cream cheese, softened
½ C cheddar cheese, shredded
½ TSP garlic, minced

Method:

1) Preheat airfryer to 400F.

2) Remove the stem of the jalapeno peppers and carefully remove the insides with a pairing knife.

3) Fill a large saucepan halfway with water set it over high heat until boiling. Add the jalapenos to the boiling water for 5 minutes.

4) Drain the water and remove the jalapenos. Set aside to cool.

5) Meanwhile, in a medium bowl combine cream cheese, shredded cheese, and garlic. Mix until well combined.

6) Stuff each hollowed-out jalapeno with the cream cheese mixture, all the way to the top.

7) Next, mix together loose sausage, brown sugar, ,garlic, onion powder, salt and pepper.

8) Scoop out about a ½ C of the meat mixture and make a disc shape. Wrap the disc around the stuffed pepper, sealing it inside.

9) Wrap two slices of bacon around the outside, securing with a toothpick as necessary.

10) Working in batches, cook the armadillo bites in the air for 15 minutes at a time before flipping and cooking for an additional 10 minutes, or until bacon is crispy.
