Instant Pot Chicken Bacon Crack Soup

Total Time: 15 min prep, 20 min cook

Servings: 8 servings

Ingredients:

12 oz. North Country Smokehouse Sugar Free Applewood Smoked Uncured Bacon, cooked and chopped
2 lbs chicken breasts
12 oz. cream cheese
1 ½ C shredded cheese
1 ½ C bone broth or water
2 C baby spinach
1 oz. ranch seasoning mix packet

Method:

1) Place bone broth, or water, in the bottom of your pressure cooker.

2) Add chicken to the insert. Prep the cream cheese by cutting the blocks into large cubes and add on top of the chicken breasts, along with cheddar cheese and seasonings. Set the pressure cooker to high for 20 minutes.

3) Once the time is over, do a quick release. Carefully remove the chicken from the pressure cooker and shred it on a plate with two forks.

4) Return shredded chicken back to the pressure cooker. Stir in spinach and bacon pieces.
