Slowcooker Leftover Ham & Bean Soup

Ingredients:

Leftover North Country Smokehouse Organic Bone-In Ham
1 package of 15 bean soup
8 C low sodium chicken broth
1 onion, diced
1 clove garlic, minced
1 TSP chili powder
15 oz diced tomatoes
1 lemon, juiced

Method:

1) Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.

2) Place beans, onions, leftover ham with bone, broth, garlic, and chili powder in a 6qt slow cooker.

3) Cook on high for 5 hours (or low for 7-8) or until beans are tender.

4) Once tender, remove the hambone and chop any meat left on the bone. Add the ham back into the pot.

5) Stir in diced tomatoes, and lemon juice. Cook for an additional 30 minutes.

6) Serve and enjoy!
