Ingredients:
6 slices North Country Smokehouse Sugar Free Organic Applewood Smoked Uncured Bacon, cooked & roughly chopped
1 C dried lentils, rinsed
2C fresh mushrooms, sliced
1 medium cucumber, cubed
1 medium zucchini, cubed
1 small red onion, chopped
½ C chopped soft sun-dried tomato halves (not packed in oil)
½ C rice vinegar
¼ C fresh mint, minced
3 TBSP olive oil
2 TSP honey
1 TSP dried basil
1 TSP dried oregano
4 C fresh baby spinach, chopped
4 oz. crumbled feta cheese
Method:
1) Place lentils in a small saucepan. Add 2 C water; bring to a boil. Reduce heat and simmer, covered, 20-25min or until tender. Drain and rinse with cold water.
2) Transfer to large bowl. Add mushrooms, cucumber, zucchini, onion, and tomatoes.
3) In a small bowl, whisk vinegar, mint, oil, honey, basil and oregano. Drizzle over lentil mixture; toss to coat.
4) Add spinach, cheese, and bacon to lentil mixture. Toss to combine and enjoy!
