Sweet & Savory Bacon Banana Bread

Not a fan of nuts in your banana bread? Swap them out for your favorite smoky strips for a little salty flavor that offsets the sweetness of the bananas.

Ingredients:

8 slices Uncured Cob Smoked Bacon, cooked and roughly chopped
1 ¼ C all-purpose flour, divided
1 tsp baking soda
1 tsp baking powder
1 C sugar
3 medium bananas, mashed
½ C canola oil
2 eggs
1 tsp vanilla extract

 

Method:

1) Preheat oven to 325°F. Lightly grease a 9x5 inch loaf pan. In a large bowl, combine 1 cup of the flour, baking soda, baking powder, and sugar. Add the banana mixture to the dry ingredients, stirring until just combined.

2) In a small bowl, place bacon and remaining ¼ cup of flour; toss until bacon is lightly coated. Fold flour-coated bacon into the batter.

3) Pour the batter into the prepared loaf pan. Bake for 70-80 minutes, or until toothpick inserted near the center comes out clean.

4) Cool in pan on a wire rack for 20 minutes before inverting the bread onto a wire rack to cool completely.

5) Slice, serve, and enjoy!
